In a saucepan heat until the dates are soft.
1 cup dates
1 tsp baking soda
1 cup warm water
50g butter
Add to this mixture:
1 beaten egg
1 tsp vanilla essence
1 cup sugar
1 1/2 cup flour
1 tsp baking powder
Cook in a 30cm round cake tin for 30min at 180C.
Topping:
1 cup coconut
1 cup brown sugar
50g butter
2 tsp milk
Put the above topping ingredients in a saucepan and slowly boil. Simmer for 2 min. Once the cake has been cooking for 30 min, pour the topping on top and cook for another 10 minutes.
